Ever wonder why some eggs are more orange or yellow than others? Ever eat a fried egg in Europe and revel in just how orange their yolks are? This especially surprises me when traveling. Well it turns out the more bright yellow and especially orange the yolk is the higher the choline content in the egg. Our bodies need choline to produce the neurotransmitter acetylcholine important in muscle memory, heartbeat and even your mood. Choline is an important nutrient that protects against liver disease and is integral in brain functioning and cell membrane health.

According to Designs for Health an average adult should consume about 400 to 500 milligrams of choline per day and 1 egg contains 126 milligrams on average. Only liver comes close to this amount of choline content. It is recommended to only eat eggs with yolks that have rich yellow and preferably orange color indicating higher choline content. So here you see pictured 3 eggs, 1 from the chickens in my yard whom my landlord feeds, 1 from a local farm that were pasture raised, and 1 pasture raised from Trader Joe's. Which one has the richest color? The winner of the choline award goes to Trader Joe's! This really surprised me. When choosing eggs go with pasture raised as the first choice as they are better even than organic eggs.
