Ingredients:

  • 1.5 cups buckwheat flour

  • 1 cup coconut flour

  • 2 teaspoons baking powder

  • 2 tablespoons ground flax and chia seeds soaked in

  • 4 tablespoons water

  • 10 chopped fresh stevia leaves. I was growing them when I made this recipe so depends on the season! (or stevia to taste. I like to get the one that is green. Stevia is a green plant and white stevia is therefore processed.)

  • 1 teaspoon pure vanilla extract

  • 2 eggs2 teaspoons

  • coconut oil

  • 1/2 cup coconut milk (I like to get the one with no guar gum)

  • 1 teaspoon cinnamon

Instructions:

  • Combine all dry ingredients.

  • Combine all wet ingredients.

  • Slowly pour wet ingredients into dry ingredients while mixing.

  • Work with dough with your hands, you may have to add about 1/4 cup of buckwheat flour as you are working with it to get bread like consistency

  • Pour in greased loaf pan

  • Bake at 175C or 350F for approximately 30-45 minutes. Bread is done when a toothpick runs clean through the center.

  • Serve and enjoy!
